Cranberry-Orange Oatmeal Bars

I volunteered to bring refreshments to our women's Bible study (the book of Daniel, a DVD Bible study by Beth Moore) Monday night. I thought it might be nice to bring something a bit lighter and healthier than chocolate chip cookies, so I searched online for healthy oatmeal bar cookies.

I came across "Oatmeal Cookie Bars" by Michelle at One Ordinary Day and it looked pretty healthy since it called for whole wheat flour. I substituted dried cranberries for cinnamon chips and I added the zest of one orange and 2 Tbs. orange juice to her recipe to make it even healthier.

Cranberry-Orange Oatmeal Bars

1/2 c. canola oil
1 c. light brown sugar
1/2 c. granulated sugar
2 large eggs
2 Tbs. milk
zest of 1 orange
2 Tbs. orange juice
2 tsp. pure vanilla extract
1/2 tsp. kosher salt
3 c. old-fashioned rolled oats
1 3/4 c. whole wheat flour
1 tsp. baking soda
5-ounce bag of dried cranberries
½ cup chopped walnuts
sea salt or kosher salt to sprinkle on top

Preheat oven to 350 degrees. Grease a 13”×9″ pan.
In a large bowl, combine oil, sugars, eggs, milk, orange zest, orange juice, vanilla, and salt. Beat on medium speed for 2-3 minutes.

In another bowl, combine oats, flour, baking soda, cranberries and walnuts. Stir until just combined. Add to liquid mixture and stir with a wooden spoon until combined. Spread in prepared pan. Use wet fingers to spread dough into the corners of the pan. Sprinkle kosher salt very lightly on top.

Bake 20 minutes or until golden. Remove from oven and cool until firm. Cut into bars.

Jerry and I had to taste test it, so we ate the four little corners.
Lots of cranberries were in this little piece.
This piece shows a piece of orange zest, cranberries, and a piece of walnut.

They were a hit. A hint about getting your orange zest: Scrub the orange well under running warm water to get all the wax off the peel. That will make it a lot easier to grate---the peel won't keep slipping over the grater due to the wax on it.
