Green Eggs and Ham

March is Read Across America Month, so on Tuesday in my friend Jeanne's kindergarten class, Dr. Seuss was honored. The children made green eggs and ham after hearing that classic Dr. Seuss book of the same name. Elizabeth, another friend of mine, came in and worked with the children in small groups, helping them to make their very own individual green eggs and ham.

Recipe for one serving:
1 1/2 Tbs egg
2 Tbs cottage cheese
1 tsp flour
3 Tbs grated cheese
Dab butter
1 Tbs chopped/snipped spinach
1 slice ham

Preheat oven to 350. Lightly grease muffin tin. Put one slice of ham into muffin tin and press into place. Mix egg, cottage cheese and flour in blender. Add cheese and dab butter to egg mixture. Add spinach to egg and cheese mixture. Pour into ham "cup." Bake for 20 minutes.

3 eggs
1 cup cottage cheese
1 Tbs flour
1 1/2 cups grated cheese
2 Tbs butter
1 cup chopped spinach
8 slices ham

Kids love to cook and usually they will at least try whatever they've made. All the kids tried the snack and only three of the twenty picked out the spinach and wouldn't eat it...so I'd call that a success!

P.S. I realize the eggs aren't green; the spinach is, so maybe the dish should be called "Green, Eggs and Ham."
