What we had for dinner last night

Last night I tried out another new recipe on Jerry, Skillet Chicken with Black Beans and Tomatoes. It was not exactly a quick and easy dinner, but the work was definitely worth it. The dish's title doesn't do it justice because it's so much more than just chicken, black beans and tomatoes. It also had lime zest, lime juice, lots of garlic, onions, olive oil, orange juice, sugar, salt, pepper, jalapeno pepper and cumin.
I served it with buttery brown rice and a green salad. You'll find the recipe here at cdkitchen.com. Did you know that eating a half cup of beans every day helps to lower your bad (LDL) cholesterol? In fact, black beans are superstars in the health food universe. They also lower heart attack risk, protect against cancer and their high fiber content helps to stabilize blood sugar, which helps you not to get hungry so soon after eating. They contain iron for energy and manganese for energy production. Plus they're a great source of protein, and when combined with whole grains like brown rice or whole wheat pasta, you get protein comparable to meat or dairy foods without the saturated fat. What's not to love about black beans (or any beans)?!

That is a world of information Pat. I am always looking for healthy meals to try and enjoy finding out why they are so healthy, and this one is now on my list. It looks delicious. Thank you so much.
